140 mm Shotoh from Miyabi is a small, but unique, cutting tool.

The ultra-sharp Honbazuke fine grinding on the symmetrically ground blade delivers extreme sharpness.

The knife is also embellished with the typical Japanese blade profile, which has a symmetrical insert with an angle of 19 degrees.

The core of the blade is made of MicroCarbide powder steel MC63, surrounded by 100 layers of two different kinds of stainless steel, creating the unique damask design. It is this pattern that makes the knife a unique and breathtaking work of art.

The CRYODUR® blade is ice hardened in a specially developed process at -196˚ degrees to achieve an exceptional hardness of 63 Rockwell, which makes the knife flexible and robust and ensures an excellent cutting ability.

The shaft in Masur wood has a light brown color, which provides an attractive contrast to the gloss of the steel. The yearling and structure are unique on each knife, making it an eye-catcher in any kitchen.

The shaft has a traditional D-shape and is beautifully balanced, which provides excellent control during the cutting work. Shotoh from the Miyabi 5000MCD series is the perfect tool for the finest knife work, and guarantees ultra sharpness.
