For fans of Japanese cuisine, the Shotoh knife from the Miyabi 5000MCD series is a delight to the eye.

With 9 cm in length, it is ideal for slicing and cleaning fruits and vegetables. The shaft is made of Masur wood to give each knife a unique vein-like pattern. An end cover and a stylish mosaic emblem complete the knife's elegant look.

The shaft is D-shaped for perfect balance and control for effortless and precise knife work. The blade has a beautiful damask design and a hard core of MicroCarbide MC63 powder steel encapsulated in 100 layers of two different types of steel.

The CRYODUR® blade is ice hardened at -196˚ degrees to achieve a hardness of 63 Rockwell, which keeps the blade sharp and flexible.

The blade further undergoes a Honbazuke fine grinding by hand between two rotating stones to achieve its extreme sharpness and is then polished using a leather wheel. The Shotoh knife from Miyabi provides beauty, ultra sharpness and functionality to any kitchen.

The blade cores are made of MicroCarbide MC63 powder steel embedded in 100 layers of steel and unique cutting ability. Exceptional hardness at 63 Rockwell.

CRYODUR® ice-hardened blades provide extremely good cutting ability, corrosion resistance and optimal blade flexibility.
