The wide, curved blade supports smooth rocking motions for efficient chopping and can also be used to gather ingredients and transfer them into your dish. The polished, rounded spine enhances comfort and helps protect your fingers during use.
At the heart of the blade is a core of ultra-hard SG2 powder steel, encapsulated in 100 layers of steel with two varying hardness levels. This layered structure delivers outstanding sharpness, excellent flexibility, and impressive durability. The special CRYODUR® ice-hardening process at -196 °C gives the blade a Rockwell hardness of around 63, ensuring superb edge retention and corrosion resistance.
The handle is made from Micarta - a composite of layered canvas and resin that is dimensionally stable, water-resistant, and incredibly durable. Ergonomically shaped for a secure and comfortable grip, the handle is fitted with stainless steel rivets and a decorative logo, while the elegant wood-look finish adds a refined visual touch.
