The 16 cm Chutoh knife from the Miyabi 5000MCD series is the perfect choice for those who want precision and balance when cutting meat or fish. The narrow and stable blade gives you full control to make clean and controlled cuts - something that has made this knife popular among professional chefs worldwide.
The blade core consists of MicroCarbide MC63 powder steel, which is embedded in 100 layers of steel with different hardnesses. This gives the knife its characteristic damask pattern and makes each knife unique. The blade is CRYODUR® ice hardened at -196°C, achieving an impressive hardness of 63 Rockwell. This ensures high sharpness, flexibility and resistance to corrosion.
The extreme sharpness of the knife is achieved through Honbazuke sharpening, where the blade is honed manually on two rotating stones and polished on a leather wheel. This process produces a scalpel-like edge with a symmetrical sharpening angle of 19°, making cutting efficient and effortless.
The handle is made of beautiful Masur wood, which with its natural grain creates an elegant contrast to the shiny steel. The traditional D-shape provides an ergonomic and secure grip, while the fine red line and elegant end cap complete the exclusive look.
