5000MCD series knives from MIYABI combine the beauty and sharpness of Japanese knives.The blade core of MicroCarbide MC63 powder steel, encased in 100 layers of steel, has a hardness of approximately 63 on the Rockwell scale and maximum wear resistance.
The blade is honed on both sides and has an ultra-sharp Honbazuke grinding for exceptional sharpness. Each blade is sharpened by hand to a very sharp angle of 9.5°-12°.
The traditional "D-shape" Masurian birch handle ensures good balance, optimal control and easy cutting. The elegant end cap completes the handle design in a fitting way.
