The Sujihiki knife from the Miyabi 5000MCD series is the Japanese version of a carving knife - created to deliver long, smooth and precise cuts in everything from roasts to fish fillets. With its long, narrow 24 cm blade, it's perfect for cutting larger items where precision and control are essential.
The core of the blade is made of MicroCarbide MC63 powder steel and encased in 100 layers of stainless steel with different degrees of hardness. This advanced multi-layer technique results in an exceptional hardness of 63 Rockwell and gives the knife the iconic damask pattern that both protects and beautifies. The unique CRYODUR® ice hardening at -196°C further improves cutting performance and ensures high resistance to rust and wear.
The sharpness is the result of Honbazuke fine grinding - a Japanese technique where the blade is sharpened by hand twice on rotating grinding stones and then polished on a leather wheel. The result is an ultra-sharp, symmetrical edge with a 19° angle that allows you to cut through meat and fish with surgical precision.
The handle is made from exquisite Masur wood with natural texture and grain variation. The traditional D-shape ensures optimal ergonomics and control, even during prolonged use. Each handle is unique and adds an elegant and natural look to the knife.
