This Santoku knife from the Miyabi 5000MCD series is the obvious choice for those who want a versatile and sharp kitchen knife with true Japanese character. The 18 cm long blade has a classic Santoku profile, making it ideal for vegetables, meat and fish - especially when slicing and chopping with high precision and in large quantities.
The blade features a core of MC63 micro-carbide powder steel enclosed in 100 layers of steel with varying degrees of hardness. This creates the characteristic damask pattern and gives the knife exceptional cutting performance and durability. Thanks to CRYODUR® ice hardening at -196°C, the blade achieves a hardness of 63 Rockwell, ensuring optimal sharpness, flexibility and resistance to corrosion.
The blade is sharpened using the traditional Honbazuke technique, resulting in an ultra-sharp and symmetrical blade profile with a cutting angle of 19°.
The D-shaped handle is made of beautiful Masur wood, which with its unique and natural grain makes each knife a small work of art. The perfect balance between blade and handle ensures ergonomic comfort and maximum control - even during extended use.
