The Nakiri knife from the Miyabi 5000MCD series is made for those who demand both function and aesthetics in the kitchen. With its 17 cm long, straight blade and Japanese name - where na means vegetable and kiri means to cut - the knife is perfect for chopping and slicing large quantities of vegetables with high precision and effortlessly.
The blade core consists of MicroCarbide MC63 powder steel embedded in 100 layers of steel of varying hardness. This creates the elegant damask pattern that makes each knife unique. The blade is CRYODUR® ice hardened at -196°C, resulting in an exceptional hardness of 63 Rockwell - a property that ensures long-lasting sharpness, high flexibility and excellent resistance to corrosion.
The traditional Honbazuke grinding is done by hand on rotating grinding stones and finished with polishing on leather wheels. The result is an extremely sharp, symmetrical edge with a 19° angle, making the knife easy and precise to work with.
The handle is crafted in beautiful Masur wood with a natural and varied grain structure. The classic D-shape ensures perfect ergonomics and balance, giving you full control - even during extended use. Each handle is unique and emphasizes the exclusive look of the knife.
