The 24 cm Gyutoh knife from the Miyabi 5000MCD series is an impressive combination of function and finesse. With its long, slim yet stable blade, the knife is ideal for slicing meat, filleting fish and chopping vegetables - all with high precision and control.
The blade is sharpened using the Honbazuke technique, where it is first ground twice on rotating grinding stones and then polished on a leather wheel. The result is a symmetrical blade with a 19° grinding angle for exceptional sharpness and an incredibly smooth cut without resistance.
The core is made of MicroCarbide MC63 powder steel embedded in 100 layers of steel with different hardnesses - a combination that creates the unique damask pattern and gives the knife unrivaled cutting performance. The CRYODUR® ice-hardened blade achieves a hardness of 63 Rockwell, ensuring high sharpness, corrosion resistance and flexibility.
The handle is made of exclusive Masur wood with vivid grain in light and dark shades, giving each knife its own unique character. The traditional D-shape ensures ergonomics and balance so you can work efficiently and comfortably - even during extended use.
