The Gyutoh knife from the Miyabi 5000MCD series in 20 cm length is an impressive combination of Japanese precision and uncompromising craftsmanship. The long, slim blade has an authentic Japanese profile, making it ideal for precise tasks with meat, fish and vegetables.
Sharpened using the traditional Honbazuke technique, the blade has a symmetrical 19° angle for remarkable sharpness and a smooth and controlled cutting motion without resistance. The core of the blade is made of MicroCarbide MC63 powder steel and is encased in 100 layers of steel, forming the characteristic damask pattern - a clear symbol of true Japanese quality.
The CRYODUR® ice-hardened blade is treated at -196°C and achieves a hardness of 63 HRC, ensuring exceptional cutting performance, high resistance to corrosion and optimal blade flexibility.
The knife's D-shaped handle is made from beautiful Masur wood, known for its unique grain and vivid play in the wood's structure. Each handle is unique, and the balance between aesthetics and ergonomics makes the knife as comfortable to work with as it is beautiful to look at.
