This 16 cm long Gyutoh knife from the Miyabi 5000MCD series is a piece of uncompromising Japanese craftsmanship, where aesthetics and functionality merge into an extraordinary knife experience. The blade is thin and precise yet stable, with an authentic Japanese profile that makes it ideal for meat, fish and vegetables.
The blade is sharpened using the traditional Honbazuke technique and has a symmetrical 19° angle, which ensures extreme sharpness and a clean cut with minimal resistance. The hard core is made of MicroCarbide MC63 powder steel and is surrounded by 100 layers of steel, which together form a characteristic damask pattern - a clear sign of quality and unique craftsmanship.
The blade is CRYODUR® ice hardened at -196°C, resulting in a hardness of an impressive 63 HRC. This ensures excellent cutting performance, high corrosion resistance and optimal blade flexibility.
The handle of the knife is designed in a traditional D-shape and made from beautiful Masur wood, which is known for its vibrant texture and unique grain. Each handle is different, making each knife a unique tool. The ergonomic design ensures perfect balance, maximum control and comfort even during extended use.
